On November 22, 2017, our head chef Olivier Valade took the direction of Dordogne to make his own caviar. Welcomed by Laurent Deverlanges at the sturgeon farm for the production of caviar (Caviar de Neuvic), Olivier has followed all the steps of the making of caviar.
